Chocolate CHOCOLATE ChOcOlAtE!
If you are anything like myself, you like love chocolate! Chocolate desserts are a must, right? There are not many chocolate of anything I have passed up in my life. O.K. I do not like chocolate flavored candles or lip gloss(that is just fake and gross...uck! I also do not like chocolate chip pancakes) ....but the real things can't be passed up! I made the following hot fudge sauce and brownie recipe for Christmas Eve at the in-laws. The Triple Brownie Pie is a recipe my Mom has made for us many many times! Excellent for sure! Easy too. I always am wanting to try something new so I attempted to make some hot fudge sauce to top the brownie and ice cream. It turned out very very good!
Homemade Hot Fudge Sauce
Makes about 2 cups
Ingredients:
¾ cup heavy cream
¼ cup light brown sugar, packed
¼ cup unsweetened cocoa
½ cup light corn syrup
3 ounces bittersweet chocolate, chopped
3 ounces good quality milk chocolate, chopped
2 tablespoons unsalted butter
½ teaspoon vanilla extract
Directions:
In a saucepan, combine the cream, sugar, cocoa, corn syrup and half of each kind of chocolate. Bring to a boil. Reduce the heat and gently simmer for 5 minutes, stirring occasionally. Turn off the heat and add in the remaining chocolate, butter and vanilla extract. Mix until completely combined and smooth. The sauce will thicken as it cools down. You want it to be warm (and not hot) before serving, otherwise it will just pool at the bottom of your ice cream dish.
Store the sauce in the refrigerator in an airtight container. It will keep for about two weeks. To reheat, microwave for a few seconds at a time.

Triple Chocolate Brownie Pie (from my Mom's kitchen)
Ingredients:
2 eggs
1 cup sugar
1/2 cup butter or margarine, melted
1/2 cup flour
1/3 cup unsweetened cocoa
1/4 tsp salt
1/2 cup semi-sweet chocolate chips
1/2 cup chopped nuts (optional)
1 tsp vanilla
vanilla ice cream
chocolate or hot fudge ice cream topping
Directions: Heat oven to 350 degrees.
Grease 8 or 9 inch pie plate.
In small bowl, beat eggs. Blend in sugar and butter. In separate bowl, stir together flour, cocoa and salt. Add to egg mixture, stirring until blended. Stir in chocolate chips, nuts if desired, and vanilla.
Spread batter into pie plate; bake 30 minutes (25 minutes for 9 inch pie plate) or until set. Pie will NOT test done in center. Cool, cut into wedges. Serve with ice cream, top with ice cream topping.
