Bowl Master!

That's me alright! I am not kidding you when I tell you I bowled a 200 game last nite!  Seriously!  My series still sucked...405...only because my first game was a 98 and my 3rd  game was a 107!  I blame the good and bad games on work and beer.  1st...I had worked that day....I was tired, stressed...not relaxed ...rushing.  Started drinking some beer and by the 2nd game I was in a zone...relaxed....doing well...beer tasted good!  The 3rd game...I am not so sure...but I was not able to keep it in the zone.  The beer was wearing off or I didn't have any more beer to drink.....or I drank too much beer!  (its pretty much the 1st 2 ones...)  Whatever it is...I was very pleased with my surprising 200 game!  That is 2  - 200 games this year!  Sweet!

White Cheese and Chicken Lasagna

Image
I found this from Pinterest…thought it looked and sounded yummy….and I have to say it did not disappoint. The original recipe is from hiddenponies.com   I made a few changes and I also made it in a 9x9 pan mostly because a 9x13 pan of anything is too much for my family.   I did use my new trick I learned just recently from my Mom about cooking the noodles in the microwave….love it.  Works so nice!  This recipe makes a nice white sauce that would be a nice base for any type of cheese sauce (add cheddar etc to make homemade mac n cheese). One last thing is that I put another layer or cottage cheese…so basically layer it however you like.  I always lose track whenever I try to layer in a lasagna and in the end it really doesn’t matter!   Enjoy! 9 lasagna noodles ½ cup butter 1 onion, chopped 1 clove garlic, minced 1/2 cup all purpose flour 1 tsp. salt 2 cups chicken broth 1 ½ cups milk 4 cups shredded mozzarella cheese, divided 1 cup grated Parmesan cheese, divided 1/2 tsp. dried basil 1/

Family Ice Fishing Fun on Fowler Lake

Image
Today James took all 3 of his girls ice fishing for the first time on Fowler Lake in Oconomowoc.  What a beautiful day it was!  The sun was shining(my favorite part), hardly any wind and lots of thick ice!  I enjoyed finally understanding what ice fishing is all about.  Taking lots of time to drill the holes, set up your tip ups and wait!  (No really, we all enjoyed ourselves!)  People were playing catch out there or even golfing while waiting for their tip-ups to go up! We brought a  ball to toss around and the girls enjoyed being pulled in the sled James has to tote all of his ice fishing gear (there is lots!)  Ice Fishing on Fowler.

Chicken Soup for the Quandt’s.

Image
Last nite I tried a new recipe from a magazine, where you were supposed to get 2 meals out of it.  This one was such that the 1st nite it was chicken soup and then you reserved some of the chicken, potatoes, veggies to make a pot pie for later in the week.  Well…I am not making a pot pie next week, let me tell you!  Cause the soup was so darn good!  There are NO leftovers.  Oh, well – better it be good now and eat it all vs its only ok …but lets make pot pie with it!   I did make a few changes to the recipe, 0so below is my rendition. Chicken Soup in the CrockPot adapted from a recipe – but  I cannot find the original! Ingredients: 1 large sweet onion, finely chopped. 1 fennel chopped (never used this before – it was interesting and is what I think gave the soup the classic chicken soup taste!)- aka fennel anise. (in case you are buying it at Pick n Save and the young male cashier has no idea…look under “A” cause that makes sense!) A few carrots (I did like 4) – sliced 4 cele

Good Granola…..

Image
Today I made a new homemade granola recipe I found from the site Budgetbytes ….I think it is mighty tastey.  I made a few changes…forgot the vanilla(by accident)…and added dried blueberries, cherries and cranberries instead of raisins.   Here I am mixing it 1/2 way thru the cooking and here is the finished product with dried fruit mixed in.  Once it cooled it became nice and crunchy (not too crunchy though). Cinnamon Pecan Granola 4 cups  rolled oats              1 cup pecan halves    1/4 cup ground flaxseed 1/4 cup brown sugar         1/4 cup honey           1/4 cup vegetable oil 1 tsp cinnamon                  1 tsp vanilla                 1/2 tsp salt            1/2 cup raisins Begin by preheating the oven to 325 degrees. In a large bowl combine the rolled oats, ground flaxseed, and pecans (roughly chopped). Stir until combined. In a small saucepan, combine the honey, brown sugar, oil, salt, and cinnamon. Cook over low heat while stirring until the brown sugar

PANCAKES!

Image
I don’t know what it is, but I am always on the lookout for a really good pancake.  I found this recipe from CookingUpNorth .  She got the recipe from one of those cookbooks that reveals the recipes of well known restaurants.  I had to give it a try, and I was not let down.  They are light, fluffy and tasty.  Definitely a keeper!  Try it for BLD (breakfast, lunch or dinner – I do like breakfast for dinner every so often, mostly when he is off hunting because he does not like it!) IHOP pancakes 1 1/4 c. flour 1 tsp. baking powder 1 tsp. Baking soda pinch of salt 1 egg, beaten 1 1/4 c. buttermilk 2 Tbsp. melted butter 1/4 c. sugar Stir together the flour, baking soda, baking powder, and salt. Mix the egg with the buttermilk and add to the flour mixture, stirring only until smooth. Add the melted butter and sugar. Fry on a greased griddle. Serves 4.
